So, it took a while but we have finally consumed the 20 lbs of apples that we brought home from apple picking. This is the last recipe that we made. I was a little skeptical, but it turned out pretty well.
Kiddo, loved it. She loved the process and the results, we hope you will too.
Fringe benefit to cooking with my Kiddo: she is gaining so much confidence. I few weeks ago I asked her if she was good a baking and cooking. She said, “Yeah; I a good cooker!” I asked how she knew that she was good, and she responded by saying, “I cook a lot. Like apple pie, and chicken, and pancakes.” So, in addition to sharing a fun activity, spending one-on-one time, watching her develop new skills and learn new words, I also get to see Kiddo learn to appreciate her skills and accomplishments.
OK, so back to the recipe. I found it on my favorite recipe site. But I am one of those annoying people who changes the original recipe before I even try it out, so the recipe below is my version.
Apple Blondies
Ingredients:
- 1/2 cup butter, softened
- 1 cup white sugar
- 1 egg
- 3 medium(ish) apples, peeled, cored, and diced
- 1/2 cup chopped walnuts
- 1 cup AP flour
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Directions:
- Preheat oven to 350 degrees Fahrenheit. Grease an 8×8 inch baking pan.
- In a large bowl, cream the butter and sugar. Then add the egg and mix until fluffy.
- Fold in the apples and the walnuts (this is what the original recipe said, and I thought it was odd to do before adding the flour, but it turned out fine — also, Kiddo liked helping with this part).
- In a small bowl, sift together the dry ingredients. Stir the flour mixture into the wet mixture just until blended.
- Spread the batter evenly in the prepared baking pan.
- Bake for about 35 minutes, or until the top is golden an a toothpick comes out clean.
